01 - 14 oz kielbasa sausage, sliced into 1/2-inch pieces

02 - 1 lb baby potatoes, quartered
03 - 1 red bell pepper, sliced
04 - 1 green bell pepper, sliced
05 - 1 medium red onion, sliced
06 - 2 cloves garlic, minced
07 - 1 jalapeño pepper, finely chopped with seeds
08 - 2 green onions, sliced (garnish)

09 - 1 1/2 tsp smoked paprika
10 - 1 tsp cayenne pepper
11 - 1/2 tsp crushed red pepper flakes
12 - 1/2 tsp freshly ground black pepper

14 - 3 tbsp olive oil
15 - Fresh parsley, chopped (garnish)
# How to Make It:
01 - Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add kielbasa slices and cook for 3 to 4 minutes, stirring occasionally, until browned. Remove with slotted spoon and set aside.
02 - Add remaining 1 tablespoon olive oil to the skillet. Add quartered baby potatoes and sauté for 6 to 7 minutes, stirring occasionally, until softened and lightly browned.
03 - Stir in red and green bell peppers, red onion, jalapeño, and minced garlic. Cook for 4 to 5 minutes until vegetables are tender.
04 - Incorporate smoked paprika, cayenne pepper, crushed red pepper flakes, black pepper, and salt. Stir thoroughly to coat all ingredients evenly.
05 - Return kielbasa to the skillet; toss to combine. Cook for an additional 2 to 3 minutes to meld flavors and finish cooking potatoes, testing tenderness with a fork.
06 - Remove skillet from heat. Garnish with sliced green onions and chopped fresh parsley. Serve immediately while hot.
