- Matcha Syrup: 1 cup (240 ml) hot water, 2 teaspoons high-quality matcha powder, 2 tablespoons granulated sugar
- Mascarpone Cream: 1 cup (240 ml) heavy cream cold, 8 oz (225 g) mascarpone cheese room temperature, 1/3 cup (40 g) powdered sugar, 1 teaspoon pure vanilla extract
- Snow Topping: 2 tablespoons powdered sugar, 1 teaspoon matcha powder (for dusting)
Instructions
- Prepare the Matcha Syrup:
- In a small bowl, whisk together hot water, matcha powder, and granulated sugar until fully dissolved. Set aside to cool to room temperature.
- Make the Mascarpone Cream:
- In a chilled mixing bowl, whip the heavy cream to soft peaks. In a separate bowl, gently blend mascarpone, powdered sugar, and vanilla until smooth. Fold the whipped cream into the mascarpone mixture until well combined and fluffy.
- Assemble the Cups:
- Break ladyfingers in half if necessary to fit your serving cups. Briefly dip each ladyfinger in the cooled matcha syrup (do not soak), then arrange a layer at the bottom of each cup.
- Add Cream Layers:
- Add a generous spoonful of the mascarpone cream over the ladyfingers. Repeat with another layer of dipped ladyfingers and cream, finishing with a smooth top layer of cream.
- Chill:
- Cover the cups and refrigerate for at least 2 hours to set and chill.
- Finish:
- Before serving, sift the powdered sugar over the top for a snow-like effect, then dust lightly with matcha powder.
