- Candy Centers: 2 cups powdered sugar 1/2 cup unsalted butter, softened 1/4 cup cream cheese, softened 1/2 teaspoon vanilla extract 1/4 teaspoon salt
- Flavored Fillings (optional, choose one or more): 1/4 cup shredded coconut 1/4 cup creamy peanut butter 1/4 cup chopped dried fruit (apricots, cherries, or cranberries)
- Chocolate Coating: 12 oz (340 g) semisweet or milk chocolate, chopped 1 tablespoon coconut oil or vegetable shortening
- Decorations: Assorted pastel sprinkles Colored icing pens Edible pearls or sugar flowers
Instructions
- Mix Candy Centers:
- In a large bowl, beat together powdered sugar, butter, cream cheese, vanilla, and salt until smooth. If desired, divide the mixture and mix in coconut, peanut butter, or dried fruit to create different flavored centers.
- Shape Eggs:
- Using your hands, shape the mixture into small egg shapes (about 1-inch each). Place eggs on a parchment-lined tray and refrigerate for 20 minutes to firm up.
- Melt Chocolate Coating:
- Meanwhile, melt the chocolate and coconut oil together in a heatproof bowl over a pan of simmering water, stirring until smooth. Remove from heat and let cool slightly.
- Dip Eggs:
- Dip each chilled egg into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined tray.
- Decorate:
- While the chocolate is still soft, decorate eggs with sprinkles, icing pens, edible pearls, or sugar flowers as desired.
- Chill to Set:
- Chill eggs in the refrigerator for 15 minutes until set.
