Crispy baguette slices topped with juicy tomatoes, fresh basil, garlic, and a drizzle of olive oil, served in an elegant diagonal line perfect for a simple, crowd-pleasing appetizer.

This is one of my favorite appetizers to serve when guests arrive because it looks impressive yet is really easy to make.

Ingredients

  • 1 French baguette: sliced diagonally into 8 pieces (about 1/2-inch thick)
  • 2 tbsp extra virgin olive oil: for brushing and topping
  • 2 medium ripe tomatoes: diced
  • 1 small garlic clove: minced for topping
  • 2 tbsp fresh basil leaves: finely chopped
  • 1/2 tsp sea salt: for seasoning
  • 1/4 tsp freshly ground black pepper: for seasoning
  • 1 small garlic clove: peeled for rubbing toast
  • Extra basil leaves: for garnish (optional)
  • Balsamic glaze: for drizzling (optional)

Instructions

Preheat the oven:
Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
Arrange the baguette:
Place slices in a diagonal line on the baking sheet and brush both sides with olive oil.
Bake:
Bake for 8 to 10 minutes turning halfway until golden and crisp.
Prepare topping:
Mix diced tomatoes, minced garlic, chopped basil, 1 tbsp olive oil, salt and pepper in a bowl and set aside.
Rub garlic:
Remove toasted slices and gently rub one side of each with peeled garlic clove while warm.
Assemble:
Spoon tomato mixture on each toast and arrange in a diagonal line for presentation.
Garnish and serve:
Add extra basil and drizzle balsamic glaze if desired then serve immediately.
